Carlos’ White Bean Chili Gumbo (from Tim of the Future)

Making a movie isn’t an easy task. And for Carlos, there are plenty of tasty meals between writing assignments and production schedules. A man needs to eat!

In our newest podcast, Tim of the Future, our intern boasted about all the cool new things happening with Judas Kiss, like the new Web site and the prospectus for new investors. But none could be more pleasing to Carlos’ tummy as the recipe to White Bean Chili Gumbo.

Carlos’ White Bean Chili Gumbo

Ingredients:
1 lb Chicken Andouille Sausage (Diced and grilled in olive oil)
1 cup chopped onion
1 can (or the equivalent) chicken broth
3 cloves of garlic, chopped finely
2 tsp Cumin seed (ground will not withstand long cooking as well)
1/2 tsp dried oregano leaves
2 -15oz cans white beans (great northern or cannellini), drained and rinsed
1 to 2 cups sliced okra (frozen if you can’t get it fresh)
1-2 cans of diced tomatoes (not whole tomatoes, you want to use the juice from can)
jalapeno chili peppers, fresh, jarred or canned, optional or ‘to taste’ (depending on how much heat you like!)

Preparation:
Combine all ingredients in slow-cooker and stir occasionally. (approx. 3-5 hours, depending on your schedule)
Top each serving with shredded Monterey jack cheese and or broken tortilla chips if desired.
 Chili Gumbo is also great over rice.

  3. Chili in a gumbo? I was shocked but I have to admit that it tastes good! You people just go ahead and try this recipe!!!
